Lift the lid off barbequed meat with the world’s finest BBQ sauce. Cactus Tom’s easy to make BBQ sauce will put your backyard on the map as the place to go for down home al fresco dining.
•1 Tbsp brown sugar
•1 “squirt” tomato ketchup
•1 tsp paprika
•1 pickled chipolte pepper (or chipolte paste equivalent)
•4 to 6 garlic cloves
•1 Tbsp teriyaki sauce (or Worcestershire sauce)
•black pepper to taste
•1 tsp salt
•2 cups/500g passata (or crushed tomatoes)
•1/2 tsp each cumin, coriander & fennel seeds ground
Lovingly peel, and finely chop the garlic. Using the flat side of a chef’s knife and salt as grit on a cutting board, create a smooth garlic paste by rubbing in a circular motion. (This is a trick known only to a few of the world’s finest chefs).
Simply combine the garlic paste with all of the other ingredients and chill for 2 hours or overnight. We have had reports of people impulsively using this sauce without chilling out. They still recommend Cactus Tom’s BBQ sauce… you can be the judge.
